Lasagna soup

A cozy twist on classic lasagna—rich, cheesy, and effortlessly delicious! 

Ingredients 

  • 1 lb ground beef, cooked and drained 
  • 1 jar (about 24 oz) marinara or tomato sauce 
  • 5 cups beef broth 
  • 13–14 lasagna noodles, broken into bite-sized pieces 
  • 1 small onion, diced 
  • 5 cloves garlic, minced 
  • ½ cup fresh parsley, chopped 
  • Salt and pepper, to taste 
  • Pinch of cayenne pepper 
  • Italian seasoning, to taste 
  • 3 cups shredded mozzarella cheese (plus extra for topping) 
  • 2 cups grated parmesan cheese (plus extra for topping) 

Instructions 

  1. Sauté the Aromatics: In a Dutch oven, brown the ground beef over medium heat until fully cooked. Add the diced onion and minced garlic, cooking for 1–2 minutes until fragrant. 
  1. Build the Flavor: Pour in the beef broth and marinara sauce. Stir in the chopped parsley, salt, pepper, cayenne, and Italian seasoning. Let the mixture simmer on low heat for about 30 minutes, stirring occasionally. 
  1. Make It Cheesy: Gradually add the mozzarella and parmesan cheeses, stirring until they melt into the soup, creating a creamy, luscious base. 
  1. Add the Pasta: Toss in the broken lasagna noodles and cook until they’re tender. 
  1. Serve and Enjoy: Stir well and ladle the soup into bowls while hot. Top each serving with a dollop of ricotta, extra mozzarella, or parmesan for that classic lasagna finish.
