Crispy Ranch Chicken

This easy ranch chicken recipe combines the bold flavors of ranch dressing with a crispy corn flake coating, making it both comforting and satisfying. Since I don’t get to cook Monday through Thursday—my husband has to pick up the slack (not that he complains)—Fridays are extra special for me. I absolutely love Fridays because they give me the perfect opportunity to unwind and cook something special for my loved ones. With just a handful of simple ingredients and minimal prep time, you can have a flavorful meal on the table any night of the week.
Ingredients:
4 boneless, skinless chicken breasts
1 cup ranch dressing
3 cups corn flakes, crushed
1 ½ tablespoons Italian seasoning
1 ½ teaspoons garlic powder
½ teaspoon paprika
Salt and pepper, to taste
Pinch of cayenne pepper, optional (for a spicy kick)
Instructions:
- Preheat your oven to 400°F. Lightly grease a baking dish—using a vegetable oil sprayer works great.
- Pour the ranch dressing into a large bowl. In another bowl, combine the crushed corn flakes, Italian seasoning, garlic powder, paprika, salt, pepper, and cayenne (if using). Mix well.
- Coat each chicken breast completely in the ranch dressing, then dredge it in the seasoned corn flake mixture. Make sure each piece is evenly coated.
- Place the coated chicken breasts in the prepared baking dish. Bake for 30–35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
For a complete meal, I served this dish with a side of creamy mashed potatoes and rich chicken gravy. The combination perfectly complements the crispy ranch chicken, making it an irresistible dinner everyone will enjoy.
