Crispy Ranch Chicken

This easy ranch chicken recipe combines the bold flavors of ranch dressing with a crispy corn flake coating, making it both comforting and satisfying. Since I don’t get to cook Monday through Thursday—my husband has to pick up the slack (not that he complains)—Fridays are extra special for me. I absolutely love Fridays because they give me the perfect opportunity to unwind and cook something special for my loved ones. With just a handful of simple ingredients and minimal prep time, you can have a flavorful meal on the table any night of the week. 

Ingredients: 

4 boneless, skinless chicken breasts 

1 cup ranch dressing 

3 cups corn flakes, crushed 

1 ½ tablespoons Italian seasoning 

1 ½ teaspoons garlic powder 

½ teaspoon paprika 

Salt and pepper, to taste 

Pinch of cayenne pepper, optional (for a spicy kick) 

Instructions: 

  1. Preheat your oven to 400°F. Lightly grease a baking dish—using a vegetable oil sprayer works great.
  2. Pour the ranch dressing into a large bowl. In another bowl, combine the crushed corn flakes, Italian seasoning, garlic powder, paprika, salt, pepper, and cayenne (if using). Mix well.
  3. Coat each chicken breast completely in the ranch dressing, then dredge it in the seasoned corn flake mixture. Make sure each piece is evenly coated.
  4. Place the coated chicken breasts in the prepared baking dish. Bake for 30–35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.

For a complete meal, I served this dish with a side of creamy mashed potatoes and rich chicken gravy. The combination perfectly complements the crispy ranch chicken, making it an irresistible dinner everyone will enjoy.
