Biscuits and Gravy Casserole

Ingredients

For the Gravy:

  • 1 lb spicy breakfast sausage
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Milk (as needed)
  • Salt and freshly ground black pepper, to taste

For the Casserole:

  • 6 large eggs
  • Splash of milk
  • 3 cups shredded cheddar cheese (divided: 2 cups for the casserole, 1 cup for topping)
  • Salt and pepper, to taste
  • 8 refrigerated biscuits

Instructions

  1. Prepare the Sausage Gravy:
  1. In a large skillet over medium heat, brown the sausage until fully cooked, about 8–10 minutes. Remove the sausage, leaving the flavorful drippings in the pan.
  1. Add butter to the skillet, then sprinkle in the flour. Stir constantly to create a roux, cooking until the mixture is golden and fragrant.
  1. Gradually whisk in milk until the gravy reaches your desired consistency. Season with salt and pepper. Let the gravy simmer, adding more milk if needed.
  1. Stir half of the cooked sausage into the gravy and set aside.
  1. Assemble the Casserole:
  1. Preheat your oven to 350°F (175°C). Grease a 13x9-inch baking dish.
  1. In a medium bowl, whisk together the eggs, 2 cups of cheddar cheese, a splash of milk, salt, and pepper.
  1. Pour the egg mixture into the prepared baking dish. Evenly arrange the biscuits on top.
  1. Drizzle half of the sausage gravy over the biscuits. Sprinkle with the remaining cheese and the rest of the crumbled sausage.
  1. Bake and Serve:
  1. Bake for 35–45 minutes, or until the biscuits are golden and the eggs are set.
  1. Remove from the oven, top with the remaining gravy, and serve warm. Enjoy a comforting, crowd-pleasing breakfast!
