Cozy Italian Sausage & Potato Soup
This hearty soup is perfect for sharing! Spicy Italian sausage, creamy potatoes, and fresh greens come together in a rich broth, now with the added sweetness and crunch of carrots and celery for extra comfort and flavor.
Ingredients:
- 2 pounds spicy ground Italian sausage
- 2 medium onions, diced
- 6 cloves garlic, minced
- 8 medium potatoes, diced (about 3 pounds)
- 2 cans (14.5 oz each) diced tomatoes
- 8 cups chicken broth
- 4 teaspoons Italian seasoning
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 2 cups heavy cream
- 4 cups fresh spinach (or kale), roughly chopped
- 4 large carrots, peeled and diced (new addition)
- 4 celery stalks, diced (new addition)
Directions:
- In a large pot, brown the Italian sausage over medium heat. Drain excess grease for a lighter soup.
- Add diced onion, minced garlic, carrots, and celery. Sauté for 3–4 minutes until vegetables are fragrant and beginning to soften.
- Stir in diced potatoes, diced tomatoes, chicken broth, Italian seasoning, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes and vegetables are tender.
- Stir in heavy cream and spinach (or kale).
- Simmer 3–5 minutes more, until the soup is creamy and the greens are wilted.
- Taste, adjust seasoning, and serve warm. Enjoy with crusty bread for a complete meal
