Cozy Italian Sausage & Potato Soup

This hearty soup is perfect for sharing! Spicy Italian sausage, creamy potatoes, and fresh greens come together in a rich broth, now with the added sweetness and crunch of carrots and celery for extra comfort and flavor.  

Ingredients: 

  • 2 pounds spicy ground Italian sausage  
  • 2 medium onions, diced  
  • 6 cloves garlic, minced  
  • 8 medium potatoes, diced (about 3 pounds)  
  • 2 cans (14.5 oz each) diced tomatoes  
  • 8 cups chicken broth  
  • 4 teaspoons Italian seasoning  
  • 2 teaspoons garlic powder  
  • Salt and pepper to taste 
  • 2 cups heavy cream  
  • 4 cups fresh spinach (or kale), roughly chopped  
  • 4 large carrots, peeled and diced (new addition) 
  • 4 celery stalks, diced (new addition) 

Directions: 

  1. In a large pot, brown the Italian sausage over medium heat. Drain excess grease for a lighter soup.  
  1. Add diced onion, minced garlic, carrots, and celery. Sauté for 3–4 minutes until vegetables are fragrant and beginning to soften.  
  1. Stir in diced potatoes, diced tomatoes, chicken broth, Italian seasoning, garlic powder, salt, and pepper.  
  1. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes and vegetables are tender.  
  1. Stir in heavy cream and spinach (or kale).  
  1. Simmer 3–5 minutes more, until the soup is creamy and the greens are wilted.  
  1. Taste, adjust seasoning, and serve warm. Enjoy with crusty bread for a complete meal
