My Husband’s Fiery Sausage & Potato Omelette
There’s something deeply comforting about cooking breakfast for someone you love. This morning, I decided to surprise my husband with another omelette—but this time, I turned up the heat and heartiness.
I started by browning some crumbled sausage in a skillet until it was sizzling and golden. Then came the diced potatoes—crispy on the outside, tender on the inside—seasoned with just a pinch of salt and a whisper of oregano to give it that earthy lift.
For the cheese, I didn’t hold back. I layered in Colby Jack for its creamy melt, sharp cheddar for depth, and a bold sprinkle of Carolina Reaper cheese to wake up his taste buds. It’s not for the faint of heart, but he loves a little fire with his eggs.
Once the filling was ready, I poured the beaten eggs into a hot pan, let them set just enough, then tucked the spicy, cheesy, sausage-potato mixture inside. A gentle fold, a few more seconds to seal the edges, and breakfast was served.
