Prime Rib Dip Sandwiches with Peppers, Onions & Provolone
These Prime Rib Dip Sandwiches are everything you crave on a chilly evening: tender slices of leftover prime rib, sweet sautéed peppers and onions, melty provolone, and a rich, savory au jus for dipping. They feel indulgent but come together fast — perfect for hungry teens, husbands who wander into the kitchen sniffing the air, or anyone who appreciates a good, dunkable sandwich.
🛒 Ingredients
• 1–1½ lbs cooked prime rib, thinly sliced
• 2 bell peppers, any color, sliced
• 1 large onion, sliced
• 4 hoagie rolls
• 8 slices provolone cheese
• 2 tbsp butter or olive oil
• Salt & pepper, to taste
• 2 packets au jus mix
👩🍳 Directions
1. Heat the butter or oil in a large skillet over medium heat. Add the sliced bell peppers and sauté until they begin to soften.
2. Add the onions and cook for another 2–3 minutes, until everything is tender and fragrant.
3. Stir in the sliced prime rib and toss to warm it through.
4. Lay the provolone slices over the mixture, cover the pan, and let the cheese melt. Give everything a gentle stir so the cheesy goodness coats the meat and veggies.
5. Spoon the mixture into hoagie rolls.
6. Meanwhile, prepare the au jus according to the package directions.
7. Serve the sandwiches warm with a cup of au jus on the side for dipping.
