  • Rotini Noodles
  • Shredded sharp cheddar cheese (about 16 oz)
  • 1 Cup parmesan cheese
  • 1 cup mozzarella cheese
  • Jar of cheese wiz (15 oz)
  • 1 stick of butter (divided)
  • 4 tablespoons flour
  • 6 cups of milk
  • 1 egg
  • Make the Cheese Sauce:
    • In a saucepan, melt 4 tablespoons of butter over medium heat. Add the flour and stir well to combine, creating a smooth roux.
    • Gradually add the milk, stirring continuously until the mixture bubbles slightly and thickens.
    • Add the shredded cheddar cheese ( save some for the top), parmesan cheese and mozzarella cheese and stir until it's completely melted. Next, stir in the cheese wiz until the sauce is smooth and creamy.
    • Temper in the egg by slowly adding a bit of the hot cheese sauce to the beaten egg, then mix it back into the saucepan.
  • Cook the Pasta:
    • Meanwhile, boil the rotini noodles according to the package directions. Strain and set aside.
  • Combine and Bake:
    • In a large baking dish, combine the cooked pasta with the cheese sauce, folding them together until the pasta is well-coated. Add more cheese to the top.
  • Bake at 350 degrees for 30 minutes, until the dish is bubbly and golden brown.
