Chicken sausage Gumbo with Rice

Ingredients:
- 6 boneless skinless chicken breasts. (cut into 1-inch pieces)
- Vegetable oil
- Salt and pepper
- Cajun seasoning (measure with your heart)
- Abdoulie sausage about 12 oz sliced into ½ inch slices
- 1 Large yellow onion
- 3 celery ribs
- 3 cloves garlic
- ½ cup flour
- 1 green bell pepper seeded and chopped
- 1 jalapeno chili seeded and finely chopped
- 4 Cups chicken Broth (more possibly needed so buy more)
- ¼ cup parsley
- 2-3 dashes tabasco sauce
- T tablespoon butter
- Steamed white rice.
Instructions:
- In a large Dutch oven warm oil about 2 tablespoons. While oil is warming season the chicken pieces with salt and pepper. (I like to pat the chicken with a paper towel first then add the seasoning add a little of the Cajun seasoning. Add ½ the chicken into the Dutch oven and sear until browned. Remove chicken and sear the second half of the chicken and remove. Then sear the Sausage and cook until browned on one side. Transfer to the same plate as the chicken we will need this later.
- Add the more oil and the flour and mix until smooth, the roux will turn brown that is normal I like to add a small amount of butter at this point.
- Here is where you are going to add the veggies and cook until tender don’t worry if the veggies look like they are browning. Add the chicken broth in slowly and keep stirring. Once the mixture begins to boil, we will add back in the chicken and the sausage. Reduce the heat to low and let it simmer stirring occasionally, if you want at little more spice this is where I would add more Cajun seasoning. As it cooks it will get hotter because of the Jalapeno. Let your Gumbo simmer for about 2 hours. sprinkle with parsley and tabasco and serve over rice.
Don’t be afraid to make this dish your own, I like to add some fresh shrimp in with the sausage. Gumbo is best when cooked slowly so feel free to take your time it can cook longer then 2 hours, or you can add more chicken broth to the mix and make more of a soup. One of my favorite lunches is leftover gumbo and a homemade biscuit to dip in. Use fresh ingredients, fresh ingredients make a noticeable difference in the final dish.
