How I Turned Last Night’s Buffalo Chicken Bake into a Breakfast Omelette

You know what they say—leftovers are the gift that keeps on giving! This morning, I decided to surprise my husband with a hearty breakfast using what was left of our Buffalo Chicken & Crispy Potato Bake from last night. 

I chopped up the leftover chicken and crispy potatoes, then whisked a few eggs with a splash of milk for extra fluffiness. Into the skillet went the eggs, followed by the savory buffalo chicken mixture. As the omelette set, I sprinkled a little extra mozzarella on top (because, why not?) and folded it over into a cheesy, spicy masterpiece. 

The result? A protein-packed breakfast with all the bold flavors of last night’s dinner—perfect with a side of toast and a hot cup of coffee. Honestly, it might have been even better the second time around!
