Mac n Cheese, Marathons, and Memories: A Weekend of Laughs and Loved Ones

This weekend was so packed, I’m pretty sure my calendar now has trust issues. Saturday started with my husband and me doing our usual “errand Olympics,” competing for who can forget the most items on the list. After checking off grown-up tasks, we leveled up to “parent mode” and took the kids out for lunch at I Heart Mac n Cheese and More. Seriously, I could write love songs about that place—who knew macaroni could be customized more than a smartphone?

My son ordered a BLT and loved every bite, while my husband couldn’t resist the short rib grilled cheese—which immediately inspired him to want to make short ribs at home just to recreate the magic. Meanwhile, my daughter and I made a beeline for the mac and cheese bowls, clearly proving that a love of cheese runs in our blood. She went classic, and I turned up the heat with the buffalo chicken mac. Honestly, genetics never lie when it comes to cheese cravings.

Post-lunch, we returned home for the sacred family tradition of “horizontal activities”—aka, movie marathons, TV show binges. Honestly, the only thing moving was the remote control. Lazy afternoons are my spirit animal.

As evening rolled around, we made our way next door to Amy and Jorge’s for a Friendsgiving and fight night extravaganza. The sheer amount of food was staggering—we ended up bringing home enough leftovers to feed an army. Amy and Jorge’s cooking skills are so impressive, I wouldn’t be surprised if they were secretly running a five-star restaurant out of their kitchen. The night was filled with laughter, great conversation, and nonstop cheering, leaving our sides aching from both hilarity and the epic feast—although, in all honesty, the latter may have been a touch of indigestion mixed with joy.

Sunday is Game Day, a sacred holiday in our neighborhood. The Seahawks kicked off early, so we trekked across enemy lines (the other side of the block) to my sister-in-law and brother-in-law’s place for football and Christmas planning. Mike made us sausage breakfast sandwiches on grilled sourdough and hashbrown patties. I’m not the biggest sports fan, but let’s be real—if there’s football, there’s snacks. Hanging out with my sister Nikki and brother Mike is always a win, and I still can’t believe we all live this close together. Clearly, fate knows my priorities: family, food, and minimal commute.

We spent the rest of the day lounging around watching tv and movies some more. Gearing up for a busy week.
